roasting is a versatile option!
It's simple, easy and delicious! The garlic flavor will mellow and sweeten when roasted. The soft consistency makes it easy to spread on breads or crackers as well as adding it to sauces, dips and recipes, especially potato and pasta dishes. You can roast several bulbs of garlic at once! By cooking extra, you will have it on hand for the next week or two. After removing the roasted garlic from the cloves, you can keep it in an sealed container in the refrigerator.

Preheat oven or toaster oven to 400°F.

Remove the paper wrapper from the outside of the garlic bulb.

Cut the top off the bulb(s), down only far enough to expose the tops of the cloves.

Set them cut side up in a pan or foil lined pan.

Brush or drizzle an ample amount of olive oil over all of the exposed garlic cloves. (Try one of your favorite flavors of infused oil!)

Sprinkle with sea salt and thyme (if desired).

Cover the garlic with aluminum foil

Roast at 400°F for 35 to 50 minutes depending on the size of the garlic bulbs. Once they are soft and caramelized they should be ready to remove.

After they cool a bit, you can squeeze the bulb from the bottom to release the roasted garlic or try a small utensil to scoop the garlic out of the cloves.
